My style of how I make Chicken Salad.
4 pounds or 2 Chicken Breast Rib in.
1 can of mix vegetables
Half table spoon of Ranch dressing
3 cups of Mayonnaise
1 cup Mexican Cream (Crema Mexicana)
Wash and clean the chicken, in a pot put the chicken breast and add water to the pot until chicken is cover. Add 2 teaspoons of salt and cook on medium heat until chicken is ready (tender and easy to pull apart).
Let the chicken cool off and then shred the chicken into a large bowl.
Add the canned vegetables to the chicken.
Then add the Ranch Dressing, Mayonnaise and Cream and mix all together. If it is too dry for your taste you can add more Cream. And it is ready to eat.
I like to eat this on tostadas with lettuce or cabbage on top and some home made tomato sauce or with tortilla chips.
